Easy Key Lime Pie and Chilled Cheesecake Recipes

Key Lime Pie Recipe

This key lime pie was served to a young boy reluctantly attending a dinner party with his parents. He never forgot the slice of Floridian key lime pie set before him, and ever afterward requested it from his mother, who had to ask for the recipe.

Ingredients:

Easy Healthy Recipes?    14 oz. can (392 g) of sweetened condensed milk

?    8 oz. (230 g) package of cream cheese, softened to room     temperature

?    1/3 cup (80 ml) of key lime juice

?    8-inch size (20 cm) graham cracker crust (a homemade     one is fine but it is much simpler to purchase a ready made one from the     grocery store)

?    optional: garnishes for the pie, like chocolate syrup,     whipped cream or berries

Directions:

1.    Whip the cream cheese in an electric mixer.

3.    Add the sweetened condensed milk and then blend again.

5.    Stir in the key lime juice.

7.    Pour the mixture into the graham cracker crust and     chill for several hours.

Next to brownies, cheesecake is one of the world's most favorite desserts. There is no end to the variations on the basic cheesecake recipe, but this one is particularly easy to make and light as it uses only one 8-ounce package of cream cheese.

No Bake Chilled Cheesecake Recipe

Ingredients:

?    8 oz. (230 g) cream cheese, softened to room     temperature

?    1 cup (100 g) of sifted powdered or confectioner's     sugar

?    1 tsp. (5 ml) vanilla extract

?    1 cup (240 ml) of heavy cream, whipped

?    9-inch (23 cm) graham cracker crumb crust
?    
?    1 pint (475 ml) of strawberries

Directions:

1.    Beat together the cream cheese, sugar and vanilla     extract until the mixture is smooth.

3.    Fold in the whipped cream.

5.    Pour the mixture into the graham cracker crust and     chill the pie for several hours. If desired, sprinkle some graham cracker     crumbs on the top of the pie.

7.    Clean the strawberries and place them in a ring on top     of the chilled pie. This yields 6 servings.

The pies can be creatively garnished in several ways. They can be left with a dusting of graham cracker crumbs on the top or at serving time, dribbled with strawberry, raspberry or blueberry syrup over the tops of the slices. Whipped cream and berries are beautiful perched on a piece of pie. The slices can also be creatively presented by squiggling chocolate syrup on the dessert plates first, before placing the pie slices on them. Then squiggle more chocolate syrup on the tops of the slices, and add a couple of berries and for the key lime pie, a thin slice of lime.

Any leftovers should be stored in the refrigerator. Key Lime Pie and Chilled Cheesecake are two easy to make, great tasting pies that are sure to be a crowning glory to any meal.
